Butterfly Pea Tea (Clitoria ternatea) – dried Clitoria ternatea flowers that produce a surprising blue infusion. Popularly known in Poland as blue tea.
The infusion of clitoria flowers is known primarily as butterfly pea tea.
It is famous for its intensely blue color – which is why it is often used as a natural dye for drinks and desserts. A pure infusion without additives is characterized by a herbal, earthy and woody taste.
After adding lemon juice, the infusion turns purple! This is the result of sensitivity to PH changes.
The unusual color of the infusion is the result of the high content of anthocyanins – they are also strong antioxidants that have a positive effect on eyesight, as well as the condition of skin and hair.
Clitoria ternate is mainly cultivated and used in Thailand, India and China.
Butterfly Pea Tea contains flavonoids, phytosterols, terpenoids and lactones. Clitoria ternate is sometimes used in Ayurvedic medicine and has the following properties:
– improving brain function (recommended in cases of depression and high stress)
– analgesic, anti-inflammatory and antipyretic effects
– relaxation of smooth muscles, and thus a relaxing effect
– diuretic effect

7-10 minutes
1 brewing
Just a few (4-6) flowers are enough for 250 ml of infusion. Pour boiling water over the flowers and let them infuse for 7-10 minutes.
